Ah sushi, delicious, healthy sushi, amazing topped with tuna, or mackerel, or…salt beef?! And a bagel chip, of course. Sound good? The judges of the Original Sushi Competition 2012 certainly thought so, declaring Karen Wong the Grand Winner after some tricky deliberation.
The competition, sponsored by Kikkoman and S&B, returned in 2012 after a five year hiatus, and has only one rule: competitors must use vinegared sushi rice in their entry. Apart from that, anything goes, and past top entries have included rolls combining steamed chicken and chilli crisps, eggs Benedict with salmon, and miso with mozzarella.
Not only was the 2012 winning roll visually attractive, the judges also loved the East End theme of the entry in the year that the Olympics come to London. Unusually, the East End sushi base was made of healthy brown rice, which, whilst being delicious, is less sticky than white rice making it a challenging ingredient for this contest. However Karen pulled it off with aplomb.
